Instructions
Step 1: Prepare the Dough
- In a large bowl, beat 1 1/4 cups sugar and 1 cup butter with an electric mixer until creamy.
- Mix in 1 egg, 1 egg yolk, 1 teaspoon vanilla, and 1 teaspoon lemon rind until well combined.
- In a separate bowl, whisk together 3 cups flour and 1/4 teaspoon salt.
- Gradually add the dry ingredients to the creamed mixture, mixing on low speed until a stiff dough forms.
Step 2: Chill and Roll
- Divide the dough in half, wrap each in plastic wrap, and chill for at least 2 hours, or until very firm.
