Instructions

Step 1: Prepare the Dough

  1. In a large bowl, beat 1 1/4 cups sugar and 1 cup butter with an electric mixer until creamy.
  2. Mix in 1 egg, 1 egg yolk, 1 teaspoon vanilla, and 1 teaspoon lemon rind until well combined.
  3. In a separate bowl, whisk together 3 cups flour and 1/4 teaspoon salt.
  4. Gradually add the dry ingredients to the creamed mixture, mixing on low speed until a stiff dough forms.

Step 2: Chill and Roll

  1. Divide the dough in half, wrap each in plastic wrap, and chill for at least 2 hours, or until very firm.
  2. Preheat your oven to 400°F and lightly grease your baking sheets.
  3. On a lightly floured surface, roll one portion of the dough out to about 1/8-inch thickness.
  4. Cut into shapes with cookie cutters and place them on the prepared baking sheets.

Step 3: Bake

  1. Bake for 6-8 minutes until the cookies are set and the edges are just barely turning golden.
  2. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
