Instructions

Make the Meringue Shells

  1. Preheat oven to 275°F. Generously spray two 9-inch pie pans with cooking spray.
  2. In a large, clean bowl, beat the 8 egg whites until foamy.
  3. Gradually add the 2 cups sugar, beating on high speed until the meringue is very stiff, glossy, and holds its shape.
  4. Divide the meringue between the two pans, spreading it evenly to form two shells across the bottom and sides.
  5. Bake for 1 hour until set.
  6. Turn the oven off and let the shells cool completely in the closed oven for several hours or overnight without opening the door.

Assemble the Pies

  1. Melt the semi-sweet chocolate chips and let the chocolate cool completely to room temperature.
  2. In a chilled bowl, whip the 4 cups heavy whipping cream until stiff peaks form.
  3. Carefully spread the cooled, melted chocolate over the bottom of each cooled meringue shell until coated.
  4. Fill each shell with the whipped cream until mounded.
  5. Refrigerate for at least 2-4 hours until set before slicing and serving.

💡 Make-Ahead & Storage: Store the finished pies in the refrigerator for up to 2 days; leaving the shells to cool slowly in the oven is the key to preventing cracks.
