Instructions
Make the Meringue Shells
- Preheat oven to 275°F. Generously spray two 9-inch pie pans with cooking spray.
- In a large, clean bowl, beat the 8 egg whites until foamy.
- Gradually add the 2 cups sugar, beating on high speed until the meringue is very stiff, glossy, and holds its shape.
- Divide the meringue between the two pans, spreading it evenly to form two shells across the bottom and sides.
- Bake for 1 hour until set.
- Turn the oven off and let the shells cool completely in the closed oven for several hours or overnight without opening the door.
Assemble the Pies
- Melt the semi-sweet chocolate chips and let the chocolate cool completely to room temperature.
- In a chilled bowl, whip the 4 cups heavy whipping cream until stiff peaks form.
- Carefully spread the cooled, melted chocolate over the bottom of each cooled meringue shell until coated.
- Fill each shell with the whipped cream until mounded.
- Refrigerate for at least 2-4 hours until set before slicing and serving.
💡 Make-Ahead & Storage: Store the finished pies in the refrigerator for up to 2 days; leaving the shells to cool slowly in the oven is the key to preventing cracks.
