Instructions

Step 1: Bake the Cake

  1. Preheat your oven to 350°F.
  2. Prepare and bake the 1 package yellow cake mix in a 9x13 inch pan according to the package directions until golden brown and a toothpick inserted in the center comes out clean.

Step 2: Poke and Soak

  1. As soon as you remove the cake from the oven, while it is still hot, use a meat fork or a wooden skewer to poke holes all over the top of the 1 package yellow cake mix.
  2. In a medium bowl, whisk together the 1 (15 oz) can cream of coconut and the 1 (14 oz) can eagle brand milk.
  3. Slowly and evenly pour this mixture over the hot, poked cake, allowing it to soak completely into the holes.

Step 3: Cool and Frost

  1. Let the cake cool completely at room temperature.
  2. Once cooled, spread the 1 large (12 oz) carton cool whip evenly over the top of the cake to frost it.
  3. Sprinkle the 1/2 bag shredded coconut evenly over the Cool Whip until fully covered.
  4. Refrigerate the cake until thoroughly chilled and ready to serve.
