Instructions

Step 1: Prepare the Mousse Base

  1. In a chilled bowl, whip the 1 cup heavy cream until it begins to thicken.
  2. Gently fold in the 1/4 cup sugar, 1 tbsp instant coffee, 1 tsp vanilla extract, and a few drops almond extract until combined. Set aside.

Step 2: Prepare the Meringue

  1. In a separate clean, dry bowl, beat the 1 egg white with an electric mixer until soft peaks form.
  2. Gradually add the 2 tbsp sugar while continuing to beat until a stiff, glossy meringue forms.

Step 3: Assemble and Freeze

  1. Gently fold the meringue and half of the 1/4 cup almonds and 1/4 cup coconut mixture into the whipped cream mixture until just combined.
  2. Spoon the mixture evenly into 8 prepared soufflé cups or paper-lined muffin cups.
  3. Sprinkle the remaining half of the almonds and coconut over the tops.
  4. Freeze for at least 4-6 hours until firm. Garnish with a maraschino cherry before serving if desired.

💡 Make-Ahead & Storage: Tortoni can be kept frozen in an airtight container for up to 2 weeks. For best texture, remove from the freezer 5 minutes before serving.
