Instructions

Step 1: Preparation and Creaming

  1. Preheat your oven to 350°F. Grease and flour two 9-inch round cake pans or one 9x13 inch pan.
  2. In a large bowl, cream the 1/2 cup shortening and 1 1/2 cups sugar together with an electric mixer until light and fluffy.
  3. Add the 2 eggs one at a time, beating well after each addition.

Step 2: Mixing the Batter

  1. In a separate medium bowl, whisk together the 2 cups flour, 1 teaspoon baking soda, 1 teaspoon baking powder, 1/2 teaspoon salt, and any optional spices.
  2. In another small bowl, combine the 1 cup banana, 3/4 cup buttermilk, and 1 teaspoon vanilla.
  3. Add the dry ingredients to the creamed mixture in three parts, alternating with the banana-buttermilk mixture, beginning and ending with the dry ingredients. Mix on low speed until just combined.
  4. If desired, fold in 1/2 cup chopped nuts.

Step 3: Baking and Cooling

  1. Pour the batter into the prepared pan(s).
  2. Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean and the top is golden brown.
  3. Cool in the pans for 10 minutes before turning out onto a wire rack to cool completely.
