Instructions

Step 1: Prepare the Dough

  1. Preheat your oven to 375°F.
  2. In a large bowl, cream the 1 3/4 cups shortening and 1 cup sugar together with an electric mixer until the mixture is light and fluffy.
  3. Beat in the 1 egg and 1 teaspoon almond extract until well combined.
  4. In a separate bowl, sift together the 2 3/8 cups flour and 1/8 teaspoon baking powder.
  5. Gradually add the dry ingredients to the creamed mixture, mixing on low speed until a soft dough forms. If desired, mix in a few drops of green food coloring.

Step 2: Press and Bake

  1. Fill your cookie press with the dough and fit it with the Christmas tree disk.
  2. Press the cookies onto an ungreased cookie sheet and decorate with sprinkles if desired.
  3. Bake for 10-12 minutes until the edges are set but not browned. Let the cookies cool on the baking sheet for one minute before transferring to a wire rack.
