Instructions

Step 1: Prep and Batter

  1. Preheat your oven to 325°F and line two 12-cup muffin tins with paper liners.
  2. In a large bowl, whisk together the dry ingredients: 2 cups flour, 1 tsp baking soda, 1 tsp cinnamon, 1/2 tsp cloves, and 1 tsp salt.
  3. In a separate bowl, combine the wet ingredients and sugars: 2 large eggs (lightly beaten), 3/4 cup sugar, 1/2 cup vegetable oil (or applesauce), and 2 tsp vanilla.
  4. Stir the 2 cups peeled, diced apple and 2 cups grated carrot or zucchini directly into the wet mixture.
  5. Gently fold the dry ingredients into the wet ingredients until just combined, then fold in the 1 cup raisins.

Step 2: Baking

  1. Fill the prepared muffin cups 2/3 full with the batter.
  2. Bake at 325°F for 25 minutes or until a toothpick inserted in the center of a muffin comes out clean and the tops are lightly golden and springy to the touch.
