Instructions

Step 1: Preparation

  1. Preheat oven to 375°. Paper line muffin cups.
  2. Prepare topping by combining 1/2 c. sugar, 1/3 c. flour, 1/2 t. cinnamon, and 1/4 c. cold margarine. Stir until crumbly and set aside.

Step 2: Batter and Baking

  1. Cream 1/3 c. sugar and 1/4 c. margarine together. Add 1 egg and mix well.
  2. Combine 2 1/3 c. flour and 1 T. + 1 t. baking powder. Add dry ingredients alternately with 1 c. milk.
  3. Stir in 1 t. vanilla and 1 t. blueberry flavor.
  4. Spoon the batter into the prepared muffin cups.
  5. Sprinkle the crumbly topping over the batter.
  6. Bake for 25-30 minutes until golden brown and a toothpick inserted in the center comes out clean. Remove from pan.
