Instructions

Step 1: Batter Preparation

  1. Beat 3 eggs until foamy, then add 2 cups sugar, 1 cup oil, 2 cups zucchini, 1 tbsp vanilla, and 1 tbsp cinnamon.
  2. Add the dry ingredients consisting of 3 cups flour, 1 tsp salt, 1 tsp soda, and 1/4 tsp baking powder. Mix well until just combined, then fold in 1/4 cup nut meats.

Step 2: Baking

  1. Put the batter into greased loaf pans.
  2. Bake at 325°F for 50-60 minutes, or until a wooden toothpick inserted into the center comes out clean and the loaves are golden brown.

Step 3: Glaze

  1. Mix together 1 cup powdered sugar and 1/4 cup frozen orange juice.
  2. Pour the glaze over the bread while it is still warm after baking.
