Instructions

Step 1: Mixing

  1. Grease pan real good (fits 2 loaf pans or a bundt pan).
  2. Mix all above together: 2 cups grated zucchini, 2 cups sugar, 3 eggs, 1 cup oil, 2 cups sifted flour, 1/4 tsp baking powder, 2 tsp baking soda, 3 tsp cinnamon, 1 tsp salt, 2 tsp vanilla, and 1 cup chopped nuts.

Step 2: Baking & Cooling

  1. Bake at 350° for 1 hr until golden and a toothpick inserted in the center comes out clean.
  2. Set 5-10 min, then remove from pan.
