Instructions
Step 1: Simmering
- Combine the 6 cups sugar, 3 quarts water, 3/4 cup instant coffee, and 3 vanilla beans (if using) in a large saucepan.
- Bring to a boil, watching carefully to prevent the mixture from boiling over.
- Reduce heat to a simmer and cook for 1 1/2 hours until thickened and well combined.
Step 2: Bottling and Aging
- Cool the syrup completely.
- Add 3 tablespoons pure vanilla extract (if not using beans earlier) and 6 cups vodka.
- Pour into bottles and drop a coffee bean into the bottom of each.
- Allow to age in a cool, dark place for about 4 weeks until mellowed and smooth.
