Preparation
- Peel the 6 hard-boiled eggs and slice them in half lengthwise.
- Carefully remove the yolks and place them into a mixing bowl; rice or mash the yolks with a fork.
- Add the 1 tsp mustard, 1/4 tsp salt, 1 cup flaked crab, 1/2 cup chopped celery, 1/2 cup chopped walnuts, and 2 tbsp green pepper to the yolks.
- Gradually stir in enough mayonnaise until the mixture is moist and holds its shape.
- Stuff the yolk mixture back into the egg whites.
- Place each stuffed egg onto a fresh slice of tomato and serve chilled.
