Instructions

Preparation

  1. Peel the 6 hard-boiled eggs and slice them in half lengthwise.
  2. Carefully remove the yolks and place them into a mixing bowl; rice or mash the yolks with a fork.
  3. Add the 1 tsp mustard, 1/4 tsp salt, 1 cup flaked crab, 1/2 cup chopped celery, 1/2 cup chopped walnuts, and 2 tbsp green pepper to the yolks.
  4. Gradually stir in enough mayonnaise until the mixture is moist and holds its shape.
  5. Stuff the yolk mixture back into the egg whites.
  6. Place each stuffed egg onto a fresh slice of tomato and serve chilled.

💡 Make-Ahead & Storage: The egg filling can be prepared up to 24 hours in advance and stored in an airtight container in the refrigerator; assemble on tomato slices just before serving to prevent sogginess.
