Instructions

Beau Monde Dip Preparation

  1. In a medium mixing bowl, combine 1 cup sour cream, 1 cup mayonnaise, 1 Tbsp grated fresh onion, 1 Tbsp dill seed, 1 Tbsp fresh parsley, and 1 Tbsp beau monde spice.
  2. Mix together thoroughly. Cover and refrigerate for several hours or overnight for the best flavor development. Serve chilled with fresh vegetables or sliced jicama.

Bar-B-Qued Pecans Preparation

  1. Preheat oven to 300°F (150°C).
  2. In a bowl, combine 2 Tbsp melted butter, 1/4 cup Worcestershire sauce, 1 Tbsp catsup, and 1/8 tsp Tabasco sauce.
  3. Stir in 4 cups pecan halves until they are well coated with the seasoning mixture.
  4. Spread the pecans in a single layer in a shallow baking pan.
  5. Bake at 300°F for 40 minutes, stirring every 10 minutes to prevent burning. They should be fragrant and toasted.
  6. Transfer the baked pecans to paper towels to drain, and sprinkle with salt if desired.

Jalapeño Fudge Preparation

  1. Preheat oven to 350°F (175°C).
  2. Grate 1 lb cheddar cheese and 1 lb Monterey Jack cheese directly into a 9x13-inch baking pan.
  3. Add 3 dashes Tabasco sauce, 8 chopped jalapeño peppers, and 1 can chopped green chilies to the cheese.
  4. In a separate bowl, whisk 12 well beaten eggs with 1/2 cup pancake mix until smooth.
  5. Pour the egg mixture over the cheese and mix well to distribute the ingredients evenly.
  6. Bake at 350°F for 40 minutes until the center is set and the top is lightly golden brown.
  7. Allow to cool slightly, then cut into 1-inch squares. Serve warm or at room temperature.
