Instructions

Step 1: Combine the Ingredients

  1. In a medium mixing bowl, beat the 2 large bricks cream cheese until smooth and creamy.
  2. Fold in the drained 1 small can crushed pineapple, 1/4 cup chives, 1/4 cup bell pepper, 1/2 cup chopped pecans, and 1/2 tsp. seasoned salt until the mixture is uniformly combined.

Step 2: Shape and Coat

  1. Form the cream cheese mixture into a large, cohesive ball.
  2. Spread the remaining 1 cup chopped pecans onto a shallow plate or sheet of wax paper.
  3. Roll the cheese ball gently in the 1 cup chopped pecans until the entire surface is completely and evenly coated.

Step 3: Chill and Serve

  1. Wrap the coated cheese ball tightly in plastic wrap to help it hold its shape.
  2. Refrigerate for at least 2 hours (or overnight) until firm and chilled through. Serve alongside crackers or sliced baguette.
