Instructions
Step 1: Prepare the Marinade
- In a small bowl, whisk together the 3 tablespoons low-calorie Italian dressing, 1 tablespoon lemon juice, 1/2 teaspoon instant granulated garlic, and 1/4 teaspoon dried tarragon to create the marinade.
Step 2: Marinate
- Add the 6 large shrimp, 4 thin lemon slices, and 6 pimento-stuffed olives to the bowl. Stir gently to coat everything, then cover and let marinate in the refrigerator for at least 15-30 minutes.
Step 3: Assemble and Broil
- Preheat your broiler. If using wooden skewers, soak them in water for 20 minutes to prevent burning.
- Thread the ingredients onto the skewers, alternating between olives, shrimp, and lemon slices. Reserve the leftover marinade for basting.
- Place the skewers on a broiler pan or a baking sheet lined with foil.
- Broil about 4-5 inches from the heat for 3 minutes on one side.
- Flip the skewers, baste with the reserved marinade, and broil for another 3 minutes, or until the shrimp are pink, opaque, and cooked through.
