Instructions
Step 1: Simmer the Meat
- Place the 1.5 lbs pork ribs in a large pot and pour in enough water to completely cover the meat.
- Bring to a boil, then lower the heat to a gentle simmer. Cook until the pork ribs are fork-tender, which should take about 45 to 60 minutes.
Step 2: Add Vegetables and Seasoning
- Once the meat is tender, add the 1 cup green beans first as they take longer to cook.
- Add the remaining vegetables, including the 1/2 head cabbage and 2 cups spinach, and cook until they are tender-crisp and vibrant green.
- Stir in the 1 packet tamarind soup base (you may use a little of the packet or the whole packet depending on your preferred level of sourness) and stir well to dissolve.
- Serve the hot soup and tender meat over a bed of freshly cooked rice.
💡 Make-Ahead & Storage: The sour broth develops deeper flavor when made a day ahead. Reheat gently on the stovetop and add fresh spinach just before serving to keep it vibrant green.
