Cooking Instructions

  1. Fry 4 slices bacon in a large kettle until crisp.
  2. Add 2 tbs. butter or margarine, 3 1/2 to 4 lbs. stewing chicken, 6 med. onions, 1 green pepper, 3 cans tomatoes, 2 cans kernel corn, 3 lbs. potatoes, 1 1/2 cups water, 1 tbs. salt, 1/4 tsp. paprika, 1/4 tsp. curry powder, and 1/4 tsp. pepper.
  3. Bring the mixture to a boil, then cover and simmer for at least 4 hours, stirring occasionally.
  4. After about 1 hour of cooking, remove the stewing chicken, bone it, dice the meat, and return it to the kettle to finish cooking until tender.

💡 Make-Ahead & Storage: This stew tastes even better the next day; store in an airtight container in the refrigerator and reheat gently on the stovetop.
