Instructions
Step 1: Brown the Meat
- In a skillet over medium-high heat, brown the 1 pound lean ground beef and 1 medium to large chopped onion until the meat is fully cooked and the onions are translucent and fragrant.
Step 2: Slow Cook
- Transfer the browned ground beef and onion mixture to a crockpot.
- Add the 1 medium can chopped tomatoes with juice, 1 can tomato soup, 3 beef bouillon cubes, 1 large can Veg-All mixed vegetables, 1 small can drained green lima beans, and 4 to 5 tablespoons long grain rice to the crockpot.
- Season with salt and pepper to taste, stirring well to combine.
- Cook on low all day or all night until the rice is tender and the flavors have melded into a rich, aromatic broth.
