Instructions

Step 1: Brown the Meat

  1. In a skillet over medium-high heat, brown the 1 pound lean ground beef and 1 medium to large chopped onion until the meat is fully cooked and the onions are translucent and fragrant.

Step 2: Slow Cook

  1. Transfer the browned ground beef and onion mixture to a crockpot.
  2. Add the 1 medium can chopped tomatoes with juice, 1 can tomato soup, 3 beef bouillon cubes, 1 large can Veg-All mixed vegetables, 1 small can drained green lima beans, and 4 to 5 tablespoons long grain rice to the crockpot.
  3. Season with salt and pepper to taste, stirring well to combine.
  4. Cook on low all day or all night until the rice is tender and the flavors have melded into a rich, aromatic broth.
