Preparation and Cooking

  1. If using dried black beans, soak them overnight for 8 hours. If using canned, rinse and drain them thoroughly.
  2. In a large pot, combine the black beans with enough water or vegetable broth to cover completely.
  3. Stir in the as needed pureed garlic, as needed cilantro, to taste chili powder, to taste tomato powder, and to taste onion salt.
  4. Bring the soup to a boil, then reduce the heat and let it simmer for at least 1 hour (longer for dried beans) until the beans are tender, the flavors are deeply melded, and the kitchen is highly fragrant.
  5. For a creamier soup, use an immersion blender to partially or fully puree the soup until it reaches a smooth, velvety consistency.
  6. Serve hot and steaming, garnished with extra fresh cilantro if desired.
