Instructions
Preparation and Cooking
- If using dried black beans, soak them overnight for 8 hours. If using canned, rinse and drain them thoroughly.
- In a large pot, combine the black beans with enough water or vegetable broth to cover completely.
- Stir in the as needed pureed garlic, as needed cilantro, to taste chili powder, to taste tomato powder, and to taste onion salt.
- Bring the soup to a boil, then reduce the heat and let it simmer for at least 1 hour (longer for dried beans) until the beans are tender, the flavors are deeply melded, and the kitchen is highly fragrant.
- For a creamier soup, use an immersion blender to partially or fully puree the soup until it reaches a smooth, velvety consistency.
- Serve hot and steaming, garnished with extra fresh cilantro if desired.
