Instructions

Step 1: Prep and Sauce

  1. Place 6 medium sweet potatoes (unthawed) in a baking dish.
  2. In a saucepan, mix 1 tbsp cornstarch, 1/2 cup sugar, and 1/8 tsp salt.
  3. Add 1 cup orange juice and cook until thick and smooth.
  4. Remove from heat and stir in 1 tbsp grated orange rind.

Step 2: Baking

  1. Pour the warm orange sauce over the 6 medium sweet potatoes in the baking dish.
  2. Bake at 350° for 1 1/4 hours until bubbling and tender.
