Instructions
Step 1: Prepare the Cornmeal Mush
- Stir the 3 cups yellow cornmeal into boiling water as if making mush. Set aside to continue cooking and cool completely.
Step 2: Combine and Moisten
- In a large mixing bowl, combine the cooled cornmeal mush with 1 large loaf bread (torn into pieces), 2 to 3 large grated onions (about 2 cups grated onions), 1 tbsp. black pepper, 1 tbsp. level salt, 1 tbsp. rounded sugar, and 1 tsp. sage.
- Moisten the mixture with turkey juice and added water until it reaches the consistency of oatmeal.
- Just before placing in the oven, fold in the 4 lightly beaten eggs until fully incorporated.
Step 3: Bake
- Transfer the mixture to a greased baking dish and bake in a preheated 350°F or 400°F oven for at least 1 hour until set and golden brown on top.
