Instructions
Step 1: Mixing and Shaping
- Beat together 3 cups mashed potatoes, 2 tbsp butter, 1/8 tsp cayenne, salt to taste, 1 egg or 2 yolks, 1/4 tsp onion juice, 1 tbsp chopped parsley, and pepper until smooth.
- Cool if necessary, then shape into croquettes.
- Roll the shaped mixture in crumbs, dip in egg, and roll in crumbs again.
Step 2: Frying
- Fry the coated croquettes in deep fat until golden brown and crispy.
💡 Make-Ahead & Storage: Croquettes can be shaped and crumbed ahead of time, then refrigerated for up to a few hours before frying.
