Instructions

Step 1: Prep Squash and Apples

  1. Season 3 cups mashed cooked butternut squash with 1/4 c. butter, 1 T brown sugar, and 1/4 tsp salt & pepper.
  2. Heat 1 1/2 T butter in skillet; add 6 cups sliced pared apples, sprinkle with 1/4 c. granulated sugar, cover and simmer over low heat until barely tender.

Step 2: Assemble and Bake

  1. Spread the tender apples in a 3 qt. casserole; spoon the seasoned mashed squash evenly over the apples.
  2. Mix 1 1/2 c. cornflakes, 1/2 c. chopped pecans, 1/2 c. brown sugar, and 2 T melted butter together.
  3. Sprinkle the cornflake mixture evenly over the squash layer.
  4. Bake in a 350° oven for 15 mins until the topping is golden and bubbling.

💡 Make-Ahead & Storage: Assemble the casserole up to a point before baking, cover, and refrigerate; add the crunchy topping just before baking.
