Instructions
Step 1: Prep Squash and Apples
- Season 3 cups mashed cooked butternut squash with 1/4 c. butter, 1 T brown sugar, and 1/4 tsp salt & pepper.
- Heat 1 1/2 T butter in skillet; add 6 cups sliced pared apples, sprinkle with 1/4 c. granulated sugar, cover and simmer over low heat until barely tender.
Step 2: Assemble and Bake
- Spread the tender apples in a 3 qt. casserole; spoon the seasoned mashed squash evenly over the apples.
- Mix 1 1/2 c. cornflakes, 1/2 c. chopped pecans, 1/2 c. brown sugar, and 2 T melted butter together.
- Sprinkle the cornflake mixture evenly over the squash layer.
- Bake in a 350° oven for 15 mins until the topping is golden and bubbling.
