Make-Ahead Mashed Potatoes

Instructions

Step 1: Dressing & Salad Preparation

  1. In a small bowl, whisk together 4 Tbsp sugar, 1/4 tsp pepper, 1 tsp salt, 1/2 cup oil, and 2-4 Tbsp vinegar until well combined.
  2. In a large salad bowl, combine the chopped 1 head lettuce, 6 slices bacon, 4 Tbsp sesame seeds, 3/4 cup almonds, 4 green onions, and 1/2 (3 oz) can chow mein noodles.
  3. Toss the salad with the dressing just before serving.

Step 2: Mashed Potatoes Preparation

  1. Boil water in a large pot, add the 10 medium Idaho potatoes, and cook for about 15 minutes until soft; drain thoroughly.
  2. Beat the potatoes until smooth, then mix in 1 cup milk, 1/2 cup butter, 1 tsp salt, 1 Tbsp grated onion, and 1 (8 oz) cream cheese until well incorporated, adding more milk if needed.
  3. Spread the mixture into a 9x13-inch baking dish and sprinkle the top with paprika.

Step 3: Baking

  1. Refrigerate overnight. Take out of the refrigerator 1 1/2 hours before baking.
  2. Bake uncovered at 350°F for 45 minutes until heated through and golden.
