Instructions
Preparation and Baking
- Preheat oven to 350°F and grease a baking dish with cooking spray.
- Dice 1 onion and sauté in 1 cup margarine in a skillet until tender.
- Shred the 2 cups cheddar cheese.
- Layer the 5 cups cooked carrots and the 2 cups cheddar cheese in the sprayed baking dish.
- Pour the sautéed 1 cup margarine and 1 onion mixture over the top of all layers.
- Sprinkle 1 cup crushed Ritz crackers on top.
- Bake at 350°F for 35 minutes until the cheese is melted and bubbly and the cracker topping is golden brown.
💡 Make-Ahead & Storage: This casserole can be assembled ahead of time, covered, and refrigerated. Add the crushed Ritz cracker topping just before baking to ensure it stays crispy.
