Instructions
Step 1: Blanching the Broccoli
- To precook 3-4 cups broccoli, drop into a large quantity of rapidly boiling salted water and cook for 3-4 minutes until just tender when pierced with a fork.
- Drain the broccoli and cool quickly with cold water, then drain again and set aside.
Step 2: Stir-Frying
- Before starting to cook, prepare all remaining ingredients and have them within reach of your range.
- Heat a 10” or larger frying pan or wok over high heat, then put in approx. 1 tbsp salad oil.
- As soon as the oil is hot enough to ripple when the pan is tipped, add ½ - 1 tsp fresh ginger (if used) and 1-2 cloves garlic, quickly stir with a spatula until browning starts (about 30 seconds).
- Put in the broccoli, 1 tbsp water, 1 tsp sugar, and ½ tsp salt.
- Keep turning with a spatula until heated through and vibrant green (about 1-2 minutes).
- Turn out onto a warm serving dish and garnish with toasted sesame seed or toasted chopped nuts, if desired.
💡 Make-Ahead & Storage: The broccoli can be blanched ahead of time and stored in the refrigerator for up to 24 hours before stir-frying.
