Instructions

Step 1: Preparation

  1. Preheat oven to 350°F (175°C). Grease a casserole dish.

Step 2: Mixing the Casserole

  1. Thaw the 2 (10 oz) pkgs. spinach and squeeze it to remove as much water as possible.
  2. In a large bowl, combine the drained spinach, 1 can cream of mushroom soup (or 1 cup cottage cheese), 1 small onion, 1 cup cheddar cheese, ½ cup butter, and 1 cup seasoned stuffing.
  3. If using, add the 2-3 eggs and stir well until all ingredients are evenly combined.

Step 3: Baking

  1. Pour the mixture into the greased casserole dish and spread evenly.
  2. Bake for 30 minutes, or until heated through, bubbly around the edges, and golden brown and fragrant.
