Instructions
Step 1: Prep and Spinach Base
- Preheat oven to 350°F (175°C). Grease a square baking pan.
- Cook the 2 packages frozen spinach according to package directions. Drain very well, squeezing out as much excess moisture as possible.
- In a pan over low heat, combine the hot, drained spinach with the softened 4 ounce package cream cheese. Stir until the cheese is melted and the mixture is smooth.
Step 2: Mix the Custard Base
- Remove the pan from the heat. In a large bowl, combine the spinach-cheese mixture with the 3 beaten eggs, melted 4 tablespoons butter, 3/4 cup milk, 1/4 teaspoon salt, and dash of white pepper. Mix well.
Step 3: Assemble and Bake
- Pour half of the spinach mixture into the greased pan. Sprinkle evenly with 1/4 cup harvest wheat crackers (half of the crumbs).
- Pour the remaining spinach mixture over the crumbs, then top with the shredded 1/2 cup cheddar cheese and the remaining 1/4 cup harvest wheat crackers.
- Bake for 30 minutes, or until the casserole is puffed, set in the center, and golden brown on top.
