Instructions
Step 1: Toss the Vegetables
- In a large mixing bowl, combine the 1 medium head coarsely shredded cabbage, 4 stalks diced celery, 1 diced onion, 1 chopped green bell pepper, 1 jar (4 ounce) drained pimento, and 1 cup minus 2 tablespoons sugar (reserving 2 tablespoons sugar for the dressing). Toss thoroughly to distribute.
Step 2: Cook the Dressing
- In a saucepan over medium-high heat, combine the 1 cup oil, 1 cup vinegar, 2 tablespoons salt, the remaining 2 tablespoons sugar, 1 tablespoon dry mustard, and 1 tablespoon celery seed.
- Bring the mixture to a rolling boil, stirring constantly until the sugar and salt are fully dissolved and fragrant.
Step 3: Combine and Marinate
- Pour the hot dressing mixture evenly over the prepared vegetable mixture and mix thoroughly until well coated.
- Allow the slaw to cool to room temperature, then cover tightly and chill in the refrigerator for at least 24 hours before serving to allow the flavors to meld.
