Preparation

  1. In a large mixing bowl, combine the 1 medium chopped cabbage, 1 cup firmly packed, finely chopped spinach leaves, 1 cup mayonnaise, 1 Tbsp sugar, ½ tsp white vinegar, and a dash of salt & pepper.
  2. Toss all ingredients thoroughly until the cabbage and spinach are evenly coated with the dressing and the mixture is creamy.

Chilling

  1. Cover the bowl and refrigerate for at least 2 hours until thoroughly chilled and the flavors are fully melded.
