Instructions

Step 1: Prep and Mix

  1. Preheat oven to 350°F. Spray a 9x13 inch casserole dish with non-stick spray.
  2. In a large bowl, mix together the 2 cans yellow cream corn, 1 can whole yellow corn, 1 can green chilies, 1/4 cup chopped onion, 1/2 cup yellow corn meal, 2 beaten eggs, 1/2 teaspoon garlic powder, 1/2 cup salad oil, 1 tablespoon sugar, 2 teaspoon vinegar, and 2 cups evaporated milk except the cheeses.
  3. In a small bowl, toss the 1 cup Monterey Jack cheese and 1 cup sharp cheddar cheese together.

Step 2: Assemble and Bake

  1. Pour half of the corn mixture into the 9x13 inch casserole dish.
  2. Sprinkle half of the cheese mixture over this layer.
  3. Pour the other half of the corn mixture on top.
  4. Add the remaining cheese over the top.
  5. Bake for about 45 minutes, or until the casserole is set in the center and the cheese is golden and bubbly.

💡 Make-Ahead & Storage: Assemble the casserole a few hours in advance, cover tightly, and refrigerate until ready to bake; add a few extra minutes to the baking time if baking straight from the fridge.
