Instructions

Step 1: Form the Dough

  1. In a mixing bowl, combine salt, 1 1/2 C sifted self rising flour, 3 T shortening, and 7 T cold milk just as you would for a pie crust.

Step 2: Roll and Cut

  1. Roll the dough very thin on a lightly floured board, then cut it into 1x3-inch strips.

Step 3: Cook the Dumplings

  1. Drop the cut strips one at a time into vigorously boiling broth. Do not stir while cooking.
  2. After the last strip is dropped into the broth, allow to cook for 6 minutes until done.

Step 4: Rest and Serve

  1. Remove from heat, add cooked chicken, and stir gently. Let stand at least 1 hour before serving, then warm gently to serving temperature.

💡 Make-Ahead & Storage: Allow the dumplings to rest in the broth as directed for at least 1 hour to fully absorb the flavors before gently reheating.
