Instructions

Step 1: Precook Broccoli

  1. Drop 3-4 cups cut broccoli into a large quantity of rapidly boiling salted water and cook until just tender when pierced with a fork (approx. 3-4 minutes).
  2. Drain the broccoli and cool quickly under cold running water. Drain again thoroughly and set aside.

Step 2: Stir-Fry

  1. Prepare the up to ½ lb sliced mushrooms, 2 chopped shallots or green onions, 1 Tbsp water, 1 tsp sugar, and ½ tsp salt, and have them within easy reach of your stove.
  2. Heat a 10” or larger frying pan or wok over high heat. Add the 2 Tbsp salad oil to the hot pan.
  3. Add the up to ½ lb fresh mushrooms to the hot oil first and stir fry them, tossing frequently, until they are browned and tender.
  4. Add the 2 shallots or green onions and the dash of ground nutmeg to the pan. Stir fry for about 30 seconds until fragrant.
  5. Add the blanched broccoli, 1 Tbsp water, 1 tsp sugar, and ½ tsp salt to the pan.
  6. Keep turning and tossing the ingredients with a spatula until the broccoli is heated through and tender-crisp (approx. 1-2 minutes).
  7. Turn the mixture out onto a warm serving dish. Garnish with toasted sesame seeds or toasted chopped nuts, if desired, and serve immediately.

💡 Make-Ahead & Storage: The broccoli can be blanched ahead of time and stored in the refrigerator for up to 1 day before stir-frying.
