Instructions

Step 1: Cooking the Base

  1. Combine the 2 eggs (or 4 yolks), 5 tablespoons sugar, juice of 1 lemon, and 2 tablespoons melted butter in a double boiler.
  2. Cook over simmering water, whisking constantly, until the mixture is thick enough to coat the back of a spoon.

Step 2: Finishing

  1. Remove from heat and allow to cool slightly.
  2. When ready to serve, fold in the 1/2 pint whipped cream to thin and lighten the dressing.

💡 Make-Ahead & Storage: The cooked base can be refrigerated for up to 2 days; fold in the whipped cream immediately before serving.
