Instructions

Step 1: Heat the Dressing Base

  1. In a microwave-safe bowl, combine the 1/2 cup sugar, 3/4 cup oil, and 1/4 cup vinegar.
  2. Heat the mixture in the microwave on high for 1 to 2 minutes, or until the 1/2 cup sugar is completely dissolved and the liquid is hot.

Step 2: Emulsify and Assemble

  1. Whisk in the 1/4 tsp salt, 2 tsp prepared mustard, chopped green onions, and cracked pepper until the dressing is well blended and emulsified.
  2. Pour the warm dressing over the chopped spinach and crumbled bacon in a large salad bowl, tossing gently to coat and slightly wilt the spinach before serving.
