Instructions

Step 1: Cooking the Base

  1. In a saucepan, heat 1 pt vinegar and 1 pt water until boiling.
  2. Separately, mix 3/4 cup sugar, 2 tbsp flour, and 2 tbsp butter until creamed together, then stir into the boiling liquid.
  3. Remove from the stove and immediately beat in the 3 beaten egg yolks until smooth.
  4. Finish by thinning the dressing with cream to your desired consistency.
