Instructions

Step 1: Preparation and Simmering

  1. Chop the 12 large ripe tomatoes and 1 onion into small pieces.
  2. Combine the 12 tomatoes, 1 onion, 3/4 cup vinegar, 1 large pepper, 1/2 tsp salt, 1 tbsp sugar, and the pinches of celery seed, cinnamon, and allspice in a large pot.
  3. Simmer the mixture over medium-low heat, stirring occasionally, until the sauce thickens to your desired consistency and the vegetables are soft and broken down.
