Instructions
Step 1: Prepare the Paste and Vegetables
- Have ready a paste by combining 2 Tbsp cornstarch, 1/2 cup chicken broth, and 2 Tbsp soy sauce.
- Melt in a heavy saucepan 2 Tbsp butter.
- Add 1 cup chicken broth, 3/4 to 1 cup diced green pepper (optional), and 6 slices diced canned pineapple.
- Cover and simmer for 5 minutes until tender.
Step 2: Combine and Thicken
- Add the prepared cornstarch paste along with 1/2 cup vinegar, 3/4 cup pineapple juice, 1/2 cup sugar, 1/2 tsp salt, and 1/4 tsp ginger to the peppers and pineapple mixture.
- Simmer, stirring constantly until the mixture thickens and becomes glossy.
