Instructions
Step 1: Emulsify
- In a small bowl or a jar with a tight-fitting lid, combine the 3 tablespoons sugar, 1/3 to 1/2 cup catsup, 1 small dash salt, 1 small dash pepper, 1/4 cup vinegar, and 1/2 cup oil.
- Whisk or shake vigorously until the 3 tablespoons sugar is completely dissolved and the dressing is smooth, emulsified, and well combined.
- Taste the dressing and adjust the seasonings or the oil-to-vinegar ratio as desired until the flavor is balanced and bright.
- Serve immediately over your favorite salad, such as artichoke hearts or French endive.
