Instructions
Preparation
- Mix 1 small pkg lemon Jell-O, 1 cup boiling water, scant 1 tsp salt, and 1 tbsp lemon juice together, then set aside to cool slightly.
- Cook and drain 1 pkg frozen chopped spinach (10 oz).
- Stir all remaining ingredients including the 1 cup chopped celery, 1/4 cup chopped onion, 1 small carton cottage cheese, and 1 cup mayonnaise into the gelatin mixture until well combined.
- Refrigerate overnight until fully set and firm to the touch.
💡 Make-Ahead & Storage: This salad must be made the day before to allow the gelatin to set properly overnight in the refrigerator.
