Instructions

Step 1: Marinating

  1. Mix 1 1/2 T. lemon juice and 1 T. salad oil together, then combine with 1 1/2 cups elbow macaroni.
  2. Chill overnight in the refrigerator, stirring occasionally until the liquid is fully absorbed and the pasta is flavorful.

Step 2: Assembly

  1. Fold in 1 1/2 cups shrimp, 2 hard cooked eggs, 2 T. green pepper, 1 tsp. onion, 1/2 cup celery, 1/2 cup fresh tomatoes, and 1/4 cup stuffed olives.
  2. Blend 2 T. sour cream and 1/4 cup miracle whip together, then gently mix into the salad.
  3. Add 1/2 tsp. salt to taste.
  4. Chill for a couple of hours before serving until thoroughly cold and set.

💡 Make-Ahead & Storage: Macaroni can be marinated overnight, and the fully assembled salad can be stored in the refrigerator for up to 24 hours.
