Instructions

Step 1: Prep and Combine

  1. Rinse 2 16oz cans sauerkraut thoroughly with cold water in a colander, then drain well.
  2. Combine the drained sauerkraut with 1 green pepper, 1/2-3/4 c sugar, 1/2 oil, 1 T celery seed, 1 onion, 1 stick celery, 1/3 c water, and 2/3 c vinegar in a mixing bowl, stirring until the sugar dissolves.

Step 2: Marinate

  1. Cover the bowl and marinate for 24 hours in the refrigerator until flavors are fully melded and crisp-tender.

💡 Make-Ahead & Storage: This salad must be made at least 24 hours in advance to allow the flavors to properly marinate in the refrigerator.
