Instructions

Step 1: Making the Salad Base

  1. Dissolve 1 pkg lime Jell-O in 1 cup boiling water.
  2. Chill until syrupy, then stir in 1 can crushed pineapple, 1 cup small curd cottage cheese, 1/2 cup finely sliced celery, 1 Tbsp chopped pimentos, and 1/2 cup chopped walnuts.
  3. Turn mixture into a 9x5-inch loaf pan rinsed in cold water.
  4. Chill in the refrigerator until firm and set.

Step 2: Preparing the Frosting and Serving

  1. For the frosting, blend and beat until smooth 1 pkg (3 oz) cream cheese, 1 Tbsp mayonnaise, and 1 tsp lemon juice.
  2. When the salad is firm, frost the top and decorate with walnut halves.
