Instructions
Step 1: Prepare the Gelatin Base
- In a large bowl, dissolve the 1 small pkg. lemon flavored gelatin in 1/2 cup boiling water.
Step 2: Mix and Chill
- Stir in the 1 T. lemon juice.
- Stir in all the remaining ingredients: 1 cup white tuna, 1 cup chicken gumbo soup, 2 t. pimiento, 2 t. celery, 1 t. onions, 1/2 cup mayonnaise, and 1/2 cup cottage cheese until well combined.
- Pour into an oiled mold and chill for at least 4 hours until completely set and firm to the touch.
- Unmold onto a bed of lettuce to serve.
