Instructions
Step 1: Prep the Base Mixture
- Mix together the 1 onion, 1 tsp pickle relish, 1 cap vinegar, salt, and pepper in a small bowl and set aside.
Step 2: Boil and Chop
- Boil and cool the 4-5 medium potatoes and 5 hard boiled eggs. Cut the potatoes and place them in a large mixing bowl.
Step 3: Combine and Dress
- Add the onion and relish mixture from step one to the potatoes. Mix in additional mayonnaise to reach your desired consistency.
Step 4: Incorporate Eggs and Garnish
- Slice the 5 hard boiled eggs. Set half of the egg slices aside, and gently fold the remaining half into the potato mixture until well combined. Place the rest of the egg slices on top of the salad and sprinkle lightly with paprika until visually appealing.
