Instructions
Step 1: Prep the Greens
- Wash the 1 lb. fresh spinach, discarding stems; pat dry on paper towels.
- Tear into bite-sized pieces and place in a bowl.
- Add the 2 sliced green onions and sprinkle with coarsely ground pepper to taste.
- Chill in the refrigerator until ready to use.
Step 2: Cook the Bacon and Dress
- Fry the 5 slices diced bacon in a deep chafing dish on an electric skillet over low heat until crisp.
- Add the 2 Tbsp. wine vinegar, 1 Tbsp. lemon juice, 1 tsp. sugar, and ½ tsp. salt to the skillet.
- Add the chilled spinach mixture and toss just until the leaves are coated and slightly wilted.
