Instructions

Step 1: Prep the Greens

  1. Wash the 1 lb. fresh spinach, discarding stems; pat dry on paper towels.
  2. Tear into bite-sized pieces and place in a bowl.
  3. Add the 2 sliced green onions and sprinkle with coarsely ground pepper to taste.
  4. Chill in the refrigerator until ready to use.

Step 2: Cook the Bacon and Dress

  1. Fry the 5 slices diced bacon in a deep chafing dish on an electric skillet over low heat until crisp.
  2. Add the 2 Tbsp. wine vinegar, 1 Tbsp. lemon juice, 1 tsp. sugar, and ½ tsp. salt to the skillet.
  3. Add the chilled spinach mixture and toss just until the leaves are coated and slightly wilted.
  4. Sprinkle with the 1 hard-cooked coarsely chopped egg before serving immediately while warm.

💡 Make-Ahead & Storage: Prep and chill the spinach and onions ahead of time, but do not combine with the warm bacon dressing until just before serving.
