Instructions
Step 1: Prep and Simmer
- Trim excess fat and remove bone from the 3 1/2 lbs pork shoulder to yield approximately 1 1/2 lbs of lean meat.
- Cut the meat into 1/2 inch slices, then into 2-inch long strips.
- Sprinkle the meat with 1/2 tsp salt and brown in 1 tbsp fat or salad oil in a skillet.
- Add 3/4 cup water, cover, and simmer for 1 hour until tender.
Step 2: Sauce and Finishing
- Combine 1/2 cup pineapple juice (drained from chunks), 3/4 cup water, 3 tbsp brown sugar, 1/4 tsp ground ginger, 3 tbsp cornstarch, 1/4 cup cider vinegar, and 2 tbsp soy sauce.
- Pour the mixture over the meat and cook until the sauce is slightly thickened.
- Add the 1 green pepper (cut into strips), 1 medium onion (thinly sliced), and 1 cup pineapple chunks.
- Bring to a boil and cook for 5 minutes until vegetables are tender-crisp. Serve hot.
