Instructions
Step 1: Prep the Chicken and Broccoli
- In a skillet, pan-fry the 4 chicken breasts in 2 tbsp butter until cooked through and golden. Let cool, then debone and cut into bite-sized pieces.
- Cook the 1 head broccoli as directed on the package or steam until tender-crisp. Place the cooked broccoli in the bottom of a greased baking dish.
- Layer the cooked, deboned chicken breasts evenly on top of the broccoli.
Step 2: Sauce and Assembly
- In a mixing bowl, mix 1 can cream of mushroom soup with 2 tbsp sherry and a small amount of milk (about 2 tbsp) until smooth.
- Pour the soup mixture evenly over the chicken and broccoli.
- Sprinkle 1 cup canned onion rings over all.
Step 3: Baking
- Bake in a preheated oven at 350°F for 50 minutes until the sauce is hot and bubbling.
- Sprinkle 1/2 cup grated cheese over the top during the last 10 minutes of baking, until the cheese is melted, bubbly, and lightly browned.
