Mushroom Sauce

Instructions

Step 1: Prep and Stuff

  1. Trim fat and remove any bone from 6 pork shoulder steaks. Pound slices with a mallet or a meat hammer to thin them.
  2. Season the steaks with 1 tsp salt and 1/4 tsp pepper.
  3. Combine 1 egg, 1/4 cup milk, and 2 cups cubed soft bread. Add 1/4 cup chopped onion, 1/2 lb ground beef, 1 tsp prepared mustard, 1/4 tsp poultry seasoning, and 1/2 tsp salt. Mix well.
  4. Spoon stuffing onto the pork shoulder steaks, roll up jelly-roll fashion, and fasten with wooden picks or a string.

Step 2: Brown and Bake

  1. Dust the rolls with 2 tbsp flour. Brown lightly with 1 tbsp fat or salad oil in a skillet.
  2. Remove meat to a 1.5-quart casserole dish. Pour off excess fat in the skillet, add 1/2 cup water to the brown drippings, stir, and pour over the rolls in the casserole.
  3. Cover and bake in a moderate 350° oven for 1 hour until tender and cooked through.

Step 3: Mushroom Sauce and Serving

  1. Serve with mushroom sauce made by combining 1 can condensed mushroom soup and 1/2 cup milk. Simmer for 2 minutes until hot and bubbling.

💡 Make-Ahead & Storage: Rolls can be assembled and placed in the casserole dish a few hours ahead of time, covered and refrigerated until ready to brown and bake.
