Instructions
Step 1: Pressure Cooking
- Combine the 3 lb pork in lg pieces, 5 c water, 1 lb posole, 10-12 c water, 2 T salt, 1 med onion, 2 cloves garlic, 1/4 t oregano, 1 t gr. camino, and 3-6 dried red chili pods into the pressure cooker.
- Cook at 15 lb pressure for 1 hour, until the pork is fork-tender and the posole is fully bloomed and soft.
